US gallons vs UK gallons: why they're not the same size
A US gallon is 3.785 liters. A UK gallon is 4.546 liters. That's not a rounding difference or a modern conversion quirk, a UK gallon is genuinely about 20% bigger, and it has been that way since 1824. If a recipe, a fuel-economy figure, or a tank capacity just says "gallon" without saying which country it's from, that 20% gap is exactly the kind of thing that turns a recipe into a mess or a fuel estimate into a confusing one.
Same word, two separate histories
Both gallons started from the same general idea, medieval England had a handful of different gallon-sized containers for wine, beer, and grain, and no single official one. The American colonies inherited the wine gallon specifically, defined as 231 cubic inches, and the newly independent United States kept using that exact definition after 1776. It never changed. Britain, on the other hand, cleaned up its own mess of competing gallons in the Weights and Measures Act of 1824, throwing out the old wine-gallon standard entirely and defining a new imperial gallon as the volume occupied by 10 pounds of water at a specified temperature. That water-based definition came out to roughly 277.4 cubic inches, meaningfully bigger than the 231-cubic-inch gallon the US had already locked in decades earlier. Two countries, one shared starting point, two different fixes, and neither one ever adopted the other's.

Because quarts, pints, cups, and fluid ounces are all just fractions of a gallon in each system, the same split runs all the way down. A US fluid ounce is about 29.57 mL; the UK (imperial) fluid ounce is about 28.41 mL, a smaller difference than the gallon gap but still enough to matter in baking, where ratios are the whole point. And to make things messier, several countries that use metric measurements for almost everything still use a "metric cup" of exactly 250 mL for cooking, which is close to but not the same as either US cup (about 236.6 mL).
There used to be a third gallon, too
For a long time the US actually maintained two different gallons of its own: the liquid gallon covered here, and a separate, slightly larger dry gallon used for grain and produce measurements. The dry gallon has mostly fallen out of everyday use, but the US dry quart and dry pint still show up occasionally in agricultural contexts, and they are not interchangeable with the liquid quart and pint in your kitchen.
None of this is really anyone's fault, both gallons are internally consistent, just built on different reference points a couple hundred years apart. When the numbers don't match what you expected, the fix is almost always figuring out which side of the Atlantic the source came from, not that something's broken.
